I should start by saying I have never been to Italy, or even to Olive Garden, so I have no clue how remotely authentic this Zuppa Toscana soup may be. However, none of that matters as this is one of the most delicious, easiest dishes to make any time of year.
And I should also mention that, naturally, I have turned all my family members into Instant Pot users. While in Nebraska in March 2017, my brothers and I all declared that each one of us made the best Zuppa Toscana. And there was only one way to settle it – a Zuppa Toscana cookoff!
Now since I was hundreds of miles away from home, I didn’t have my pressure cookers with me. Luckily I have a large family so we didn’t have any issues gathering enough Instant Pots.
Everyone had their own idea of what the best recipe was. We enlisted the help of some friends and neighbors to do a blind taste testing. Between four adults and three children, there was a clear winner…. Yours truly!
I look forward to another cookoff one day when all my siblings are in one spot again. Before it’d be years before we’d all be under one roof. With passing of our father and grandmother over the past few years, I’m glad we’ve been able to reconnect and have these playful competitions.
And with being the youngest and only sister, I don’t mind giving my big brothers run for their money. 😉
